100 MILES at Nu restaurant + lounge

Vancouver, BC... Nu Restaurant + Lounge launches a new menu today, embracing the philosophy of sister restaurant Raincity Grill, with 100 MILE menu designations. Chef de Cuisine Joseph Sartor, working with local products produced or sourced within 100 miles, has created dishes that reflect the relaxed restaurant's approach with farm to table cuisine. 100 Mile menu items include a Chanterelle Fricassee, Roasted Yarrow Meadows Duck Confit, Salt Spring Island Mussels, Crisp "over night" braised Fraser Valley Pork Belly and many more.

Nu has taken a more flexible approach to 100 Mile dining. While still focusing on regional products, Chef Sartor has sourced the protein from within 100 miles with accompaniments from global ingredients. Says owner Harry Kambolis, "We want to feature the great resources we have from within 100 miles while still being able to use popular cuisine influences from around the world. We have found this style allows us to provide our guests with best of both worlds."
